It looks like we have assumed that in Xmas all of us will eat too much: too much food, too much fat and sugar, too much money…
It doesn’t need to be that way.
We can prepare tasty and gorgeous dishes to enjoy with our families without bombs of calories.
At the end of the day (and the end of the Xmas days) we will feel much better and without extra inches if we have been eating healthy and moderately.
Or perhaps somebody likes to be stuffed, get bad nights of indigestion and start the year with very tight trousers?
So I propose a healthy and light Xmas, without excesses.
To start with: easy and tasty appetizers ☺
TOWER OF AUBERGINE-TUNA FISH
1 tin of tuna fish (nature)
2 tablespoons of cream cheese (Philadelphia style 0% or fat reduced)
some dry tomatoes in oil (or roasted tomatoes)
a touch of Modena vinegar
salt, pepper, oregano
Pre-heat the oven at 180 degrees.
Wash and cut away the tips of the aubergine. Cut them in slices (about 1 cm thick).
Put them on a wax paper on a baking tray and add a pinch of salt, black pepper and oregano. Roast them for 15-20 minutes at 180 degrees.
Let them cool a bit.
Put in a bowl the cream cheese, the tuna drained and chopped, a touch of vinegar and mix it very well, until it has the texture of a thick cream.
Put a good spoon of the tuna mix on each aubergine slice and place a dry tomato on top.
Ready to eat!
ROLLS OF ZUCCHINI-MOZZARELLA
2 big zucchini
1 mozzarella ball
some cherry tomatoes
Wash the zucchini and cut away the tips.
Cut the zucchini from up to down as thin as possible (with a mandolin or a vegetable peeler).
Put a small piece of mozzarella on each zucchini slice and roll it. Place a cherry tomato on top of each roll and secure it with a toothpick.
Put them on an oven tray and bake them for some minutes (about 8 min. at 200 degrees) until the mozzarella is melting.
Ready to eat!
