Tofu balls

Today… vegetarian finger food.
These tofu balls are really easy to make, and they are very tasty  🙂

Tofu has an appearance similar to fresh cheese.
In fact it’s made like cheese: from milk (in this case soy milk) with the addition of clotting enzymes.
Soy beans are the only pulse that contains all essential amino acids, this means it is a complete protein (like meat, fish or eggs). Moreover, soy, like all vegetal food doesn’t contain saturated fats but only unsaturated (good one) as well as calcium, iron, vitamins…

For 8-10 balls:
1 packet of tofu (ca. 200gr.)
1 chopped onion
1 handful minced fresh parsley
½ teaspoon oregano
½ teaspoon basil
1 beaten egg
2 tablespoons wheat germ
1 tablespoon olive oil
a drizzle of soy sauce
…….

Dry the tofu block putting it between paper towels to soak the liquid. Leave it for 5-10 min.
Pre-heat the oven at 180 degrees.
Put the chopped onion in a pan with olive oil and some drops of water at mid-low heat and cook it until it’s soft and golden (or 1 min. in the microwave).
Crumble the tofu with your hands and put it into a big bowl.
Add the cooked onion, herbs, egg, wheat germ and soy sauce. Mix well, pressing with your hands.
Form the balls and place them on an oven tray layered with wax paper.
Place it in the oven at 180 degrees for 20-25 min.
Ready to eat!
