Tiramisù

The first recipe of the year! 🙂

I’m totally in love with this Italian dessert. I can’t resist ordering it if I see it in a restaurant’s menu.

So I have decided to make at home my light version and… it tastes really nice!

In any case it’s not a dessert for everyday, but just for special occasions.

For 2 persons:

2 eggs

2 tablespoons of oat bran

some drops of vanilla essence

sweetener to taste (stevia, agave…)

1 coffee (espresso)

1 tablespoon of baking powder

150 gr. of cream cheese (fat reduced -Philadelphia style)

4 tablespoons of fresh cheese (or creamy yogurt)

cocoa powder (unsweetened)

……

Prepare a coffee. Leave it to cool.

Pre-heat the oven at 180 degrees.

Separate the whites from the yolks and beat the yolks with the oat bran, baking powder and vanilla.

Beat the whites until stiff, and add it carefully to the mix of yolks.

Put this mix in a mould (of 20 cm) and bake it for 20 min. (It will be a flat cake).

Once the cake is cool, spread the coffee on it using a pastry brush (the coffee has to be cold also). Cut it into 4 pieces (circles or squares).

Put the cream cheese, the yogurt and the sweetener in a bowl and mix it well until it has a creamy texture.

Build the tiramisù (in 2 moulds or glasses): layer of cake, layer of cheese cream, layer of cake and layer of cheese cream. Sprinkle cacao powder on top.

Leave it for a couple of hours in the fridge to get cold.

Ready to enjoy!

Remember: our daily meals have to include fruits or plain yogurt as dessert.

Although tiramisù or carrot cake is delicious, they cannot be part of our daily menu. Precisely because of this, when we eat them, we will enjoy much more.
