Tacos mexicanos

What great dishes Mexico has given to the world! Fajitas, burritos, guacamole, quesadillas, pico de gallo… 

I love fingerfood! So today for dinner we will eat Mexican tacos.

You can buy the tortillas but I prefer to make them myself so they don’t have saturated fat, sugar or salt added.

The traditional recipe is with corn tortillas, but sometimes I do them with spelt or oat flour… and today I experimented successfully with chickpea flour (gluten-free) 😉

I write the ingredients for 2 persons, but you can duplicate or triplicate as needed.

Some shrimps (raw, peeled)

1 Chicken breast (without skin)

For tortillas    (4 or 5 tortillas):

100 gr. chickpeas flour (or corn, spelt, wheat flour…)

180 ml. water

1 tablespoon olive oil

salt and black pepper

Pico de gallo:

3 or 4 ripe tomatoes

2 red onions

1 handful chopped fresh coriander

½ chilli

juice of ½ lime juice

salt

Guacamole:

1 or 2 ripe avocados

salt, black pepper

juice of ½ lime

To prepare the pulled chicken:

Cook the chicken in a crockpot (or in a stewpot with water at low heat) for 90 minutes. – So it will be very tender.

Take it out from the pot, add salt, black pepper, sweet or spicy paprika (to taste) and shred it with a fork.

To prepare the pico de gallo sauce:

Wash and cut the tomatoes and the chili into small dices. (You can remove the seeds of the chilli if you don’t want it too spicy).

Finely mince the onions and the coriander.

Put everything in a bowl, add salt and lime juice to taste, and mix.

To make the tortillas:

Put in a bowl the chickpea flour, water, oil and salt and mix it well.

It will be like a mixture of crêpes.

Put a part of this mix in a non-stick pan and cook it for 2-3 min. on each side. Continue doing the tortillas until you finish the mix.

To prepare the guacamole:

Peel the avocados and mash them with a touch of salt, pepper and lime juice.

 

Sauté the shrimp in a pan with a drizzle of oil, at high heat for about 3 minutes. Add salt and pepper to taste.

Now, let’s arrange the tacos: 1 tortilla, a good spoon of pico de gallo, a good spoon of guacamole and some shrimp or chicken.

Ready to eat …and enjoy!
