Today, stuffed zucchinis. They don’t need much introduction, do they?
Some sautéed veggies, minced meat, melted cheese… But like all recipes it can be more or less healthy, more or less light…
In this case we will add just a tablespoon of olive oil to cook the vegetables, the minced meat will be good lean quality meat and the tomatoes, a tin of preserved plain tomatoes (without sugar, additives or flavour enhancers).
Believe me, this dinner will do you good.
For 3 persons:
3 small zucchinis
400 gr. chicken or turkey breast (without skin)
1 tin preserved tomatoes
2 red onions
½ yellow pepper
1 garlic clove
extra virgin olive oil
salt, black pepper
spices to taste (sweet paprika, garlic powder, garam masala…)
optional: cheese to broil
(*) These are the vegetables I used, but you can vary them depending on what you have in the fridge. Go crazy about veggies, they bring flavour! 🙂
Preheat the oven to 200 degrees.
Wash the zucchinis, cut out the edges and cut them in halves lengthways. Take away the seeds with a teaspoon. Put them up side down on an oven tray with wax paper and roast them at 200 degrees for 20 min.
To prepare the stuffing:
Finely chop the vegetables: onion, garlic, carrots, leeks and yellow pepper (I chopped them in a mincer.)
Put a tablespoon of olive oil in a big pan and cook the vegetables at mid-heat for about 5 min.
Mince the chicken breast in the mincer (like this you are sure to get good quality lean meat. The one you buy already minced has fat and normally not the best parts of the animal).
Add the minced chicken to the pan.
Add salt, pepper and spices to taste.
Add the tin of tomatoes and cook it all together for some more minutes until the sauce gets thick.
Once the zucchinis are roasted, turn them face up and fill them with a good spoon of the stuffing.
Sprinkle some grated cheese on top and bake them for a couple of minutes to melt the cheese.
Ready to eat!
This dish is an excellent low carb dinner.
If you prepare it for kids or you need to add some carbs, you can serve it with some rice, cous-cous or a slice of whole flour bread and you will have a very complete dish.
