Squid with sauce

In these cold days we feel like eating stews and hot dishes, don’t we?

This is a comfort stew dish with a thick and delicious sauce, like those ones our grandmas used to cook, but we will prepare it without fat 😉

So we can eat a good plate of it, getting good protein (squid), vitamins, minerals, fibre… and if we serve it with brown rice we will have a perfectly balanced meal. 

For 2-3 persons:

4 big squid -cut in rings (like calamari about 500 gr.)

2 ripe tomatoes

½ red bell pepper

1 small zucchini

1 onion

1 tablespoon ground almonds

a touch of milk (it can also be vegetable milk: oat, soya, rice…)

salt, spices: black pepper, oregano, basil, garlic powder…

…..

Wash and mince the vegetables. I use a blender to get the texture of a “gazpacho”.

Put the veggies in a pan and add salt and the spices (to taste).

Add the rings of squid (calamari).

Add the ground almonds and a touch of milk.

Mix it from time to time to avoid it sticking at the bottom of the pan.

Let it cook at low heat for 30-40 min. until the squid is tender and the sauce is thick.

Ready to eat!

I always serve this with brown rice. I find it’s a perfect combination for the sauce.

Or you can serve it with a good slice of bread if you like to dip bread into the sauce…

Attention! I mean 1 slice of bread (60-80 gr.) not the whole baguette! 😉
