Spongy apple bundtcake

Good morning! Today an autumn breakfast: apple-nut cake.

My neighbour’s apple tree is brimming this year, so we will eat apples in all versions possible.

This cake is delicious and very healthy, as it has slow carbs, protein, fibre and good fat from the nuts.

It’s very easy and fast to make. I bake it while we are eating dinner, so we have a super breakfast next morning 🙂

For a mould of 20 cm. (about 4 portions):

1 egg

4 egg whites

2 big apples

1 cup oat flour

1 teaspoon baking powder

a handful nuts (chopped)

cinnamon (to taste)

sweetener (to taste: stevia, agave, honey…) not too much, apples are sweet!

some drops of vanilla essence (optional, today I haven’t added any)

…….

Pre-heat the oven at 180 degrees.

Peel the apples and cut them in dices of 1 or 2 cm.

Blend all ingredients in a blender except the nuts and 1 of the apples.

Add the nuts and the apple dices to the mix and mix it with a spoon.

Put it in a silicon mould, and bake it at 180 degrees for about 35 min.

Let it cool. Take it out from the mould.

Ready to eat!

    1. Me alegro muchísimo que os gustara! … Los postres sanos, sin azúcar ni grasas pueden ser tan o más ricos que las “bombas de calorías” verdad?
      Para nuestra merienda de hoy hemos horneado un bizcocho de plátano que es de lo más rico, pronto os pondré la receta en el blog 😉 Estoy segura que os gustará tanto como a nosotros.
