Surely during these Xmas days we have been eating and drinking „a bit“ too much … and now we are in that moment: “I’m going to do a detox diet – cause I have to get rid of these extra pounds – although I will starve of hunger”

Well, let me tell you something: it won’t work like that!

We have to eat light & healthy, yes, but in a tasty and sustainable way, otherwise we will give up after 4 days.

So, today I prepared a good plate of pasta for “your diet” 😉

The trick is that only half the plate is pasta (whole spelt spaghetti), the rest are zoodles, made of zucchini and carrot. The sauce: cherry tomatoes sautéed with garlic.

Simple & tasty. Do you feel like eating it for lunch?

Per person:

50-60 gr. of pasta (I used whole spelt spaghetti)

½ zucchini

1 small carrot

10-12 cherry tomatoes

1 garlic clove

2 tablespoons of extra virgin olive oil

salt, black pepper, oregano


To prepare the sauce: Peel and slice the garlic clove. Put it into a pan with a tablespoon of olive oil, salt, pepper, cherry tomatoes and oregano. Cook it at mid-low heat for some minutes.

Peel the carrot and wash the zucchini. Cut them into fine strips. (There are different tools to make the zoodles, mine is the simplest and cheapest one).

Put a tablespoon of olive oil in a big pan and sauté the carrot and zucchini strips at high-heat for a couple of minutes. Add salt & pepper to taste.

Boil the pasta (1 minute less than it shows in the package). It’s important to cook the pasta “al dente” (*)

Once the pasta is cooked and drained, add it to the pan with the zoodles. Stir it to mix.

Serve it with the cherry tomato sauce and…

Ready to eat!

(*) It’s important to not cook the pasta too much but only “al dente”, so the glycemic index will be low and it will give us energy little by little, that means it’s “less fattening” and you will feel sated longer.
