I love figs! … so what don’t I like? 😉
Well, as their season is so short, just a few weeks in September, I rush out to buy them as soon as they appear in the market.
In this salad, I find them terrific! Their sweetness contrasts with the savoury ham, the creamy mozzarella and the crunchy hazelnuts.
For 2 persons:
150 gr. of salad leaves (curly endive, kale, rocket, cress…)
4 or 5 figs
1 mozzarella ball
50 gr. of Iberian ham (or prosciutto di Parma…)
For the vinaigrette dressing:
1 shallot or spring onion
3 tablespoons of extra virgin olive oil
1 tablespoon of balsamic vinegar
10 or 12 hazelnuts
salt, black pepper
Put the hazelnuts in an oven dish and roast them for 8 min. (be careful they can burn very easily). Chop them roughly.
Chop the shallot finely.
In a big salad bowl prepare the vinaigrette: put the hazelnuts, the shallots, salt, pepper, olive oil and vinegar and mix well.
On a plate or serving dish put the salad leaves, and over them distribute: the figs cut in quarters, the pieces of mozzarella broken with the hands, and the ham.
Pour the vinaigrette over them.
Ready to eat!
You can serve it with a good slice of rye bread.
This is a great, light salad full of flavours to prepare for dinner especially when you get home from work as it takes 5 minutes to be ready… one can ask no more.
