Salad “Beatrice”

Today we are going to eat a salad I’ve never eaten before.
My friend Beatrice has introduced it to me, so I call it like her ☺
It’s very easy and fast to prepare.
Its colours give us an idea of the quantity of vitamins it has: A, B, C, anti-oxidants: beta-carotene, fibre… moreover the beetroot has a lot of iron which our body will assimilate easily thanks to the vitamin C.
So it brings us the nutrients we need for wintertime. ☺

For 2 persons:
1 beetroot (raw)
2 big carrots
1 apple
juice of 1 small orange
juice of ½ lemon
salt, pepper, olive oil
…..
Peel the carrots, beetroot and the apple.
Grate them (not too small).
Put them in a bowl and dress it with the juice, salt, pepper and olive oil.
Mix it well and let it rest for 30 minutes or more.

Ready to eat!

An excellent option to take to work in a Tupperware, or to prepare it in advance and when we will arrive at home our dinner will be waiting for us 😉
