Just one week ‘til Christmas!! I’m nervous already … 🙂
In this last post of the year I’d like to share with you an appetizer that I love and it’s always a “must” on my table at Xmas or New Year’s Eve: Smoked Salmon Rolls.
I would like to propose something to you.
If you don’t have to cook during these special days because you are invited to celebrate Xmas at your parent’s or relative’s home, it would be a good idea to offer to bring something you prepared -like an appetizer or entrée. Surely they would like it and would appreciate your nice gesture. Finally, this is what Xmas is about, right? Sharing, helping, showing care, creating special moments…
If you feel like doing it, these salmon rolls can be your contribution 😉
For the crepes:
3 egg whites
6 tablespoons spelt flour (or whole wheat, oat flour…)
low fat cream cheese (Philadelphia style)
fresh spinach leaves
smoked salmon (thin slices)
< I do not add salt because the salmon gives a savoury touch.>
Blend the ingredients to make the crepes: the eggs, egg whites and flour.
Pour a part of the mixture into a heated non-stick pan, leave it for 1 minute, turn it and cook the other side for 1 min. more.
Put it aside on a plate and continue making the crêpes.
Spread each crepe with cream cheese, put some spinach leaves over it, and a slice of salmon on top.
Roll it and cut it into small slices of about 1 cm.
And … our healthy and festive canapés are ready!
