Roasted cauliflower

My son does not like cauliflower. This is a fact. He loves broccoli but the cauliflower no way!

So, as a new trial to get him to tolerate it, I roasted it with lots of spices. His verdict has been a simple: “pse”, but for me it is … spectacular!

As the cauliflower is not boiled but directly roasted, it has a delicious crunchy texture and the flavour and taste from the spices is… I have no words!!

For 2-3 persons:

1 cauliflower

a handful almonds or nuts

1 teaspoon fennel seeds

1 teaspoon cumin seeds

½ teaspoon mustard corns

½ teaspoon black pepper corns

1 tablespoon turmeric (curcuma)

1 pinch spicy paprika

2 tablespoons olive oil

1 tablespoon soy sauce

some fresh parsley leaves


Pre-heat the oven to 150 degrees.

Put the spice seeds (fennel, cumin, mustard and pepper) and the almonds on an oven tray with wax paper and roast them for 5 min.

Wash the cauliflower and separate its “flowers”.

Put the roasted spices in a bowl or mortar and crush them. Add the turmeric and paprika.

Put in a big bowl: the cauliflower + the spices mix + olive oil + soy sauce + 1 tablespoon of water and mix well.

Place the cauliflower on an oven tray with wax paper and roast it for about 30 min. at 200 degrees.

Serve it with crushed nuts and finely chopped parsley.

Ready to eat!
