Red lentil soup

This is a very easy and fast soup -no boiling for hours! 😉 and the result is a creamy, tasty and delicious soup.

Talking about super-foods is very “in” nowadays… but if there is a really “a top 10 food” it is pulses.

Pulses have a perfect combination of protein, carbs, good fat, lots of vitamins, iron, calcium… They are cheap, easy to store for a long time in a kitchen cupboard and they can be prepared in 1000 different ways (soups, salads, burgers, stews, patés…)

For 4 persons:

1 cup of red lentils (200 gr.)

1 onion

1 garlic clove

1 carrot

1 leek

1 tomato

4 dry tomatoes

salt, black pepper

olive oil

soy sauce

fresh parsley


Peel and chop the onion, garlic and carrot.

Wash and chop in small dices the leek and tomato.

Put all these vegetables in a stewpot with a tablespoon olive oil, salt and pepper and cook it at mid heat for 10 min.

Add the dry tomatoes (chopped), the lentils and water until it covers the lentils. Cook it until the lentils are done (about 12-15 min).

Add some drops of soy sauce and blend it.

Add soy sauce and black pepper to taste.

Serve with chopped fresh parsley.

Ready to eat.

In these cold days, arriving home thinking you have this soup prepared, when you just need to warm it up to have a comforting and delicious dinner… is absolute happiness 🙂
