Chia pudding with fruits

Today, I will invite you for a dessert that is very easy to prepare, healthy and light.

I think it’s perfect for a Christmas meal because if we serve it in nice glasses it looks very festive, don’t you think?

Our guests will surely appreciate ending the meal with something light based on yogurt and fruits …Although we will also have something else like Xmas cookies or a piece of panettone, after all it’s Christmas, isn’t it? 😉

For 6 glasses:

400 gr. plain yogurt (I used fat reduced, creamy, non sweetened yogurt)

1dl. skimmed milk

2 tablespoons of chia seeds (*)

Fruits (to taste):

2 mango

3 handfuls raspberries

-In this season the markets have a big choice of exotic fruits: pineapple, mango, lychee, papaya… I could buy everything 🙂


Put the yogurt, milk and chia seeds in a big bowl. Mix well.

Distribute it in the serving glasses and leave it in the fridge for about 1 hour.

– During this resting time the chia will rehydrate and swell, so the yogurt will get the consistency of a pudding or panacotta.

Cut the fruits in small dices and put them on top of the yogurt.

Leave it again in the fridge until you want to serve it.

Ready to eat!

(*) Chia is a relatively new food in our markets. It’s considered a “superfood” due the quantity of nutrients it has: It is a good source of protein, has a big amount of calcium (more than 5 times what milk has), iron, fibre, antioxidants, omega-3…

So this dessert can also be a good breakfast, specially for those of you who do not have a big appetite in the morning. It will bring us good energy to start the day.
