If you believe that chicken breast is one of the best meats you can choose to eat healthy and light, you are right.
If you think that eating grilled chicken breast again and again is boring and depressing, I also agree with you 😉
So today we are going to make a tasty mustard sauce chicken. It’s healthy, light, easy to prepare … and delicious.
For 2 persons:
300 gr. chicken breast (without skin) cut in strips
1 garlic clove
50 ml. of broth (or water)
1 tablespoon of extra virgin olive oil
2 tablespoons of “Dijon” mustard
a touch of coconut milk (optional)
Peel and finely chop the onion and garlic clove.
In a pan with a tablespoon of olive oil put the onion, garlic, salt & pepper to taste and cook for about 5 minutes at mid-heat.
Add the chicken strips and keep cooking for 5 more minutes.
Add the broth and cook it at high-heat until the liquid is reduced to half of its volume.
Lastly, add the mustard and the coconut milk, stir it and cook it 1 or 2 more minutes until the sauce is nice and creamy.
Ready to eat!
This dish matches perfectly with sautéed or steamed veggies & rice or cous-cous.
So, following the model of “my plate” divide your plate into quarters:
¼ will be the protein (chicken)
¼ will be slow carbs (rice, cou-cous, whole pasta…)
2/4 (or half of the plate) will be vegetables.
