Stuffed bell peppers

Today a dish I’m in love with and I prepare it very often during spring and summer.

I don’t know why I haven’t shared the recipe with you yet ??!!

After months (winter) in which finding good and tasty tomatoes is an impossible mission, now when their season is starting, I’m going to eat them in all possible versions, a kind of “total tomato immersion” 😉

There is nothing better than seasonal food, collected when they are ripe with all its flavours. Sometimes, in winter, I buy food imported from halfway around the world, but definitely there is no possible comparison.

For 4 persons:

4 bell peppers (yellow, red…)

6 ripe tomatoes

3 garlic cloves

2 shallots

1 chili

a handful of capers

a handful of black olives

a handful of basil leaves

extra virgin olive oil

salt, black pepper


2 balls of mozzarella

4 slices of whole bread

rocket salad


Pre-heat the oven at 200 degrees.

Wash the bell peppers, cut them in halves lengthwise (keeping the stalk) and remove the seeds. Put them in a baking tray add salt and pepper.

In a bowl put: diced tomatoes, sliced garlic, finely minced shallots and chilli, olives cut in halves, capers, sliced basil, salt, pepper and olive oil.

Mix well with your hands, pressing, so the flavours and juices will be well mixed.

Put this mix of tomatoes into the peppers and pour the juice that remains in the bowl over them.

Cover with silver foil and bake them for 25 min. in the oven at 200 degrees.

Remove the silver foil and bake it for 20 min. more.

Take it out from the oven and leave it for 1 hour (or more) to cool, so the peppers will soak all the juices.

Serve them with some pieces of mozzarella over them, a slice of toasted bread and some rocket leaves well dressed with vinaigrette.

Ready to eat!

As you know, I like the dishes you can prepare in advance, so as you arrive home the dinner is ready and you don’t need to start cooking.

These stuffed peppers are delicious at room temperature, so at dinner time you just need a couple of minutes to toast the bread, dress your salad and put the mozzarella over them. 🙂
