Pastry with fruits

This is another of my favourite breakfasts. Starting the day like this, nothing can go wrong 😉

It contains everything that a healthy and balanced breakfast should have: slow-releasing carbs, protein, fruits… it will keep you fit and full all morning, and although it looks like, it is NOT a bomb of calories, but the opposite.

And it’s delicious!

I will show you 2 options: one with apple compote and the other with cheese-cream and red fruits. Mmmmhhh, I don’t know which one I like the most 🙂

 For 1 person:

1 egg + 2 egg whites

2 tablespoons of oat bran

some drops of vanilla essence

½ sachet of baking powder

some drops of sweetener (stevia, agave…)


fruits to taste

1 tablespoon of cream cheese (fat reduced) (i.e. philadelphia)

2 tablespoons of blanc battu (or yogurt)


Pre-heat the oven at 180 degrees.

Beat the egg whites.

Add the rest of ingredients for the pastry (egg, oat bran, vanilla essence, baking powder and sweetener) and mix carefully.

Pour it in a square oven mould (ca.20 x 20 cm) If it’s not a silicon mould, spread a bit of olive oil first.

Bake it at 180 degrees for 15 min.

Take it out of the mould and leave it to cool completely.

(We can do this the evening before.)

 In the morning, cut the cake in 4 squares and build a tower: a layer of cake, a layer of fruits, again a cake… and so on.

Option with apple compote:

Cut a big apple in dices, put it in a bowl with some drops of water and cinnamon to taste, and cook it for 1 minute in the microwave. Mix and cook it for 1 min. more, or 2 if needed.

Option with cheese and red fruits:

In a bowl mix well the cream cheese with the blanc battu/ or yogurt until it’s very creamy.

You can use fresh red fruits when it’s in season, or frozen ones (in this case defreeze them the night before).

Ready to eat… !
