Pancakes with blueberry sauce

Today I’m going to prepare one of my favourite sweet breakfasts: pancakes with blueberry sauce.

It’s a very complete breakfast as it has the 3 macronutrients: protein (egg), carbs (oat) and “good” fat (chia & almond milk). It has also fibre (chia and oat) so it means: constant energy during the morning, good nutrients for your body, feeling sated and in good mood…

And moreover, they are delicious! A breakfast or dessert can be really tasty without adding sugar or insane fat. I would never exchange it for any industrial baking.

Per person:

1 egg + 2 egg whites

1/3 cup oat flakes (40 gr.)

1 tablespoon chia seeds

a drizzle of almond milk (50 ml.)

cinnamon to taste

a touch of stevia (or sweetener to taste)

2 handful blueberries

plain yogurt (unsweetened)


Put in a blender the egg, egg whites, chia seeds, milk, cinnamon to taste and some drops of stevia. Blend it.

Grease a non-stick pan with a drop of olive (or coconut) oil and pour a bit of the mix, add some fresh blueberries and once it is done on one side, turn the pancake.

Continue until you finish the mix.

Serve them on a plate.

To prepare the sauce, just put the blueberries in a bowl into the microwave for 1 minute and the sauce is ready.
