Pancakes (Orange blossom)

Today, Sunday breakfast. It can also be a good brunch for those of you who get up late 😉

These pancakes have all the nutrients of a healthy breakfast: carbs (oat and banana), protein (egg), unsaturated fat (chia), vitamins, minerals and no sugar or saturated fat.

They are very easy to make and they are delicious!!

So what? Have I convinced you already?

For 1 person:

1 egg + 1 egg white

1/3 cup oat flour

1 tablespoon chia seeds

½ ripe banana

½ teaspoon baking powder

juice of ½ orange

zest of 1 orange (not the white part, it’s bitter)

a touch of orange blossom essence

……

Put all ingredients in a blender and blend it.

“Paint” a non-stick pan with oil, pour a bit of the mix and make the pancakes at mid-heat, about 1 min. on each side.

Keep making pancakes until you finish the mix.

Serve them with some orange zest, pistachios, a bit of yogurt or “chocolate sauce” -> cocoa powder (without sugar) watered down.

Ready to eat!

Today I’ve made pancakes of orange blossom – I can smell spring already 😉

But you can make them with other fruits like apple & cinnamon, prune, apricot, vanilla…
