Zucchini & ham muffins

Today I’ve prepared savoury zucchini & ham muffins.

They are very spongy and light, and of course free from trans-fat and sugar…

Here you are: “healthy muffins” that can be part of a finger-food dinner if you have guests 🙂

6-8 muffins:

1 zucchini

4 slices of ham

2 eggs

3 egg whites

1 onion

1 or 2 slices of cheese (fat reduced)

4 tablespoons of oat flour

1 teaspoon of baking powder

salt, black pepper

……..

Pre-heat the oven at 200 degrees.

Wash and grate the zucchini. Put it between paper towels and press a bit to soak the water.

Chop the onion and cook if for 2 minutes in the microwave.

Cut the cheese and ham in small dices.

Put the eggs and egg whites in a bowl and beat them.

Add the zucchini, onion, cheese, ham, salt and pepper in the bowl with the eggs and mix it.

Add the flour and baking powder and mix again.

Pour the mix into silicone cupcake moulds (if you don’t have silicone moulds you need to grease them with a bit of oil).

Bake them at 200 degrees until they are golden (about 15 minutes).

Ready to eat!

These muffins have a bigger proportion of eggs to flour, therefore they are very moist and spongy similar to a soufflé.

You can also make them with any other vegetables like carrots, broccoli, leek, spinach… The kids will love them.
