I like to celebrate everything!
So if they invented a day to celebrate love, let’s celebrate it 😉
For those of you who are in love… and also for those who aren’t, today is a special breakfast:
“Muffin-brownies healthy & fit”
For 2 persons:
2 egg whites
½ cup oat flour or almond flour (*)
1 small banana
some drops of vanilla essence
1 tablespoon baking powder
1 tablespoon cocoa powder (unsweetened)
sweetener (optional, for me the sweetness of a banana is enough)
5 or 6 chopped nuts
(*) With almond flour you will get more moistured brownies.
Pre-heat the oven at 180 degrees.
Put all the ingredients in a mixer, except the nuts and mix it well.
Add the chopped nuts.
Pour the mix in muffin moulds (If it’s not silicone moulds, spread a bit of olive oil first.)
Put them in the oven for about 10-15 mins.
Ready to eat them!
They will be tender in the centre, when you prick them with a toothpick it doesn’t have to be clean.
I like to eat them warm, with yogurt and berries 🙂
You can eat them warm or at room temperature, so if you bake them the evening before, you will have ready a deliciously chocolated Valentine breakfast.
