This was my breakfast two days ago.

Well, maybe it looks a bit weird to you but you see, I had a long day in front of me, full of meetings and I didn’t know at what time I could eat my lunch or even what I would have for lunch, so I needed to start my day with a complete, nutritious and tasty breakfast.

And here is the result: savoury basil waffles, roasted cherry tomatoes, avocado, arugula leaves, strawberries and cottage cheese.

Maybe you are thinking: “Patricia, having salad and roasted tomatoes for breakfast?”  Well, then… what about having it for dinner or brunch…? 🙂

Waffles (for 1 person):

1 egg + 2 egg whites

1 big tablespoon of oat flour (20 gr.)

a handful of fresh basil leaves (or spinach)

salt, black pepper


Pre-heat the oven to 200 degrees.

Blend all the ingredients.

Pour the mixture into a silicon mould (mine is waffle-shaped)

And bake it for 10 min. at 200 degrees.

Put some cherry tomatoes on an oven tray and roast them also for 10 min.

Serve the savoury basil waffles with roasted tomatoes, avocado, strawberries, arugula leaves, cottage cheese…

Ready to eat!
