Here we are, December just around the corner. And December means Christmas, family, home plans, celebrations and overall eating and eating… It is so! Let’s accept it, we won’t escape from this whirlpool…
Moreover, when there are kids at home, baking cookies is a good plan for the cold and grey days.
So as we will eat more than we should, let’s try to eat food that has good nutrients for our body and not bombs of sugar, saturated fat, processed food….
Today we baked these cookies. They are delicious… and healthy 🙂
For 14 cookies:
100 gr. ground oats (or oat flour)
3 egg whites
1 teaspoon baking powder
sweetener to taste (agave, honey, stevia…)
juice of ½ orange
zest of 1 orange
a handful of pistachios
1 tablespoon of cocoa powder (0% sugar)
Chop the pistachios. Reserve half of them to decorate.
Put in a large bowl all the ingredients: the egg, egg whites, ground oats, baking powder, juice of ½ orange, zest of an orange, a touch of agave (or sweetener to taste) and some pistachios. Stir to mix it.
Put the mix in the fridge for 15 min.
Preheat the oven to 180 degrees.
Form your cookies and put them on an oven tray with wax paper (you can make them more or less thick depending on if you prefer them to be soft or crunchy).
Bake them for 20-25 min at 180 degrees, until they get a golden colour.
Let them cool down.
To make the chocolate sauce: mix the cocoa powder with a touch of water (or you can also melt 2 pieces of dark chocolate 80% cocoa).
Pour the chocolate sauce over the cookies making fine lines and spread over some pistachios.
Ready to enjoy!
