Sugar pea salad

In summer I don’t feel like spending a long time in the kitchen, I just want to be outdoors: reading in the shade, going for a walk or to the beach…

So I decided to do a new section #0, -recipes ready in less than 10 minutes, if it can be 5, even better 😉

Sugar pea salad.

Maybe this is a new vegetable for some of you, so let me introduce it:

The sugar peas are similar to the green beans because we eat the pod, but in fact it’s not a vegetable but a pulse, it belongs to the pea family.

In French they are called “pois gourmand” – a very appropriate name, I think.

We find them during spring-summer. They are delicious as a salad or quickly sautéed in a wok.

Today when I saw them in the market so small and tender, I jumped on them. When I arrived home I prepared this salad, in 5 minutes my lunch was ready  🙂

For 1 person:

100 gr. of sugar pea

1 big, ripe tomato

8 shrimp – raw, peeled (they can be frozen)

5 sun-dried tomatoes

1 spring onion

extra virgin olive oil

salt, pepper

……..

Pre- step: Put the sun-dried tomatoes in a bowl with warm water and leave them for 2 or 3 hours to re-hydrate them.

Boil the sugar peas in salted water for just 1 minute. Drain them.

Put a tablespoon of olive oil in a pan at high heat and sauté the shrimp.

As soon as the shrimp change their colour (just 30 seconds) add the sugar peas, salt and pepper and cook it for 30 seconds more. Put them aside to cool down.

Finely chop the onion.

Dice the fresh tomato and the re-hydrated tomatoes.

Add salt and pepper to taste.

Serve in a nice bowl: the sugar peas, shrimp, tomatoes and onion, add a drop of olive oil, mix and…

your salad is ready to eat!

I’m never tired of salads: warm or cold, with few or lots of ingredients, easy or sophisticated, as a side dish or main course…

My family keeps an eye in case I start to turn green 😉
