Salad with spiced chickpeas

And here is my salad of the day…

Have you seen the recipe I did yesterday: spiced chickpeas? As I told you, I reserved a handful of them to add to my salad.

I just wanted to share with you a picture. It may give you new ideas to give a special touch to your salads  🙂

Mixed green leaves

½ avocado

1 handful of spiced chickpeas

1 fig

1 twig of cherry tomatoes

½ small zucchini

extra virgin olive oil

apple vinegar

salt & pepper

……..

As the oven was hot (200 degrees) from baking bread, I used the remaining heat to roast some cherry tomatoes and zucchini slices.

Make thin, lengthwise slices of zucchini with a peeler.

Put them on an oven tray with wax paper. Dress them with salt, pepper and a drizzle of olive oil. On the same tray put a twig of cherry-tomato and roast them for 8-10 min. (with the oven off).

Place the different ingredients on a plate: green leaves, ½ avocado, chickpeas, fig slices, tomatoes and zucchini. Dress your salad to taste and…

Ready to eat!

It was delicious!!
