Easter codfish

For me the most typical dish for Easter is codfish.

My mother prepares it with fresh peas, fried tomato and boiled egg… mmmmhhhh I love it! I will ask her for the recipe… 😉

Today, I did another version, also very “Easter style”.

For 4 persons:

2 big sweet potatoes

4 pieces of fresh codfish

500 gr. fresh spinach

200 gr. cooked chickpeas (they can be from a tin)

2 spring onions (or leeks)

1 garlic clove

10 -12 small mushrooms

½ teaspoon sweet paprika

½ teaspoon turmeric

1 tablespoon tomato purée (concentrated)

olive oil, salt, black pepper

…..

Pre-heat the oven at 180 degrees.

Wash the sweet potatoes and put them on an oven tray layered with wax paper. (No oil needed). Bake them at 180 degrees for about 1 hour.

Put olive oil in a huge pan – the biggest you have 😉

Add the spring onions and garlic in slices, salt, pepper and mushrooms and cook it at mid-heat for 1 minute.

Add the sweet paprika, turmeric, tomato purée and spinach leaves -it looks like a huge mountain that won’t have place in the pan, but soon it will lose water and reduce its volume. Mix well.

Make 4 holes between the vegetables and place the 4 pieces of fish.

Add the cooked chickpeas over it (if they are from a tin, rinse and drain them before). Cook it (covered) for 3 or 4 minutes – So the fish will be done and tender (not dry).

Serve the fish-spinach-chickpeas with ½ baked sweet potato.

Ready to eat!
