I’m sure you like “country style French fries”, these fried potatoes with skin, crunchy outside and tender inside…
My grandmother’s ones were delicious. Like so many dishes I have in my memories such us her croquettes, cannelloni, stuffed squid … mmmmhhhh!!!!
Not very light meals as you can see 😉
She was a great cook and for me the best grandma I could have.
Coming back to the topic.
Today’s recipe is inspired by her but of course my version is light and healthy:
French fries that are not fried.
Potatoes (not too big)
1 big sweet potato
1 tablespoon of olive oil
(I will not write the quantities of the different spices because it’s to taste, depending on if you like more or less spicy, if you like the taste of garlic or not…)
Pre-heat the oven at 200 degrees.
Wash very well the potatoes and sweet potatoes (cause they won’t be peeled).
Cut them in segments/quarters.
Pour over them a tablespoon of olive oil and massage well to spread the oil.
In a clean plastic bag put the salt and all the spices you like.
Put the potato pieces in the bag, close it and shake it, so all the potatoes will be coated with the mix.
Take the potatoes out of the bag, and put them on an oven tray, well distributed, not piled up.
Bake them for 30 – 40 min at 200 degrees.
Ready to eat!
“Fried” potatoes with nearly no oil, but crunchy and tender. A perfect side dish for grilled meat or chicken.
