As some of you may already know, the winter & cold are not made for me.
I love the summer, the sun, the long warm days, the nature when it is full of green leaves…
But the Swiss winter is very hard, so to stay at home baking an apple cake is a very appealing plan for me. The house will smell from baked apple and cinnamon and we can enjoy a delicious cake for breakfast or at teatime. 🙂
For a 25 cm loaf tin or mould you will need:
2 egg whites
1 cup wheat flour (whole)
1 cup oat flour
2 apples “Golden”
¼ cup skimmed milk (or vegetable milk)
some drops of vanilla essence
some drops of agave (or other sweetener you prefer)
cinnamon to taste
1 teaspoon baking powder
Pre-heat the oven to 180 degrees.
Peel and dice one of the apples.
Put into a blender: the diced apple, eggs, egg whites, wheat & oat flour, milk, vanilla essence, agave, baking powder and cinnamon to taste.
Wash the other apple and cut it into “half-moon” slices.
Pour the mixture into the loaf tin and distribute the slices of apple on top pressing it a bit into the dough. Sprinkle cinnamon powder over it.
Bake it at 180 degrees for about 45 min.
Let it cool and take it out of the tin.
Ready to eat!
