Bulgur “exotic” salad

It’s a long time since I have made one of my most-loved salads…

But today, to say goodbye to the winter, I’ve prepared this exotic salad that is great to eat at room temperature and its ingredients are not “cold”.

Bulgur is a cereal very similar to cous-cous, it is broken and pre-cooked wheat. This whole grain contains fibre, vitamin B, a bit of protein (12%) and carbs.

Like all other carbs (rice, pasta, bread, potatoes…), we have to be prudent and not serve ourselves a mountain of cereal. A tip: we can divide our plate in quarters, the cereal should be just ¼ of our plate.

For 3 – 4 persons:

1 cup bulgur

½ cauliflower

2 spring onions

2 small zucchini

1 handful raisins

1 orange (zest + juice)

½ mango

1 handful pistachios (or almonds) without salt, chopped

1 handful fresh parsley

1 handful fresh mint

1 teaspoon cumin

1 teaspoon ras-el –hanout

salt, pepper

extra virgin olive oil

Grate the orange skin. Reserve it.

Chop in small dices the zucchini and the mango. Reserve it.

Put the raisins in a glass with orange juice to moisten them.

Boil the bulgur in salty water for 10 min. Drain it. Let it cool.

Chop the cauliflower and onions in a mincer (to get them to the size of rice).

In a pan, add a drizzle of olive oil. Sauté the cauliflower and onion, salt, pepper, cumin and ras-el-hanout for about 5 min. at mid-heat.

In a big salad bowl put: the drained bulgur, cauliflower, onion, raw zucchini, drained raisins, mango, chopped pistachios and finely minced mint and parsley. Mix everything.

To make the dressing, put in a jar: orange juice (where we soaked the raisins), olive oil, salt, pepper and zest of orange. Shake it well and pour it over your salad.

Ready to eat!

I love this salad with all its flavours: spices, herbs, fresh and dried fruits…

If any ingredient is new for you or you dislike it, you can exclude it or put just a pinch to taste 😉
