Chicken-lemon skewers

For me BBQ time means skewers.

I adore those sticks with chicken, vegetables, fish, shrimp … whatever.

This marinade of yogurt and lemon makes the chicken very tender and aromatic. You can prepare it in advance very easily and when you put them on the BBQ, they don’t take long to cook – very important point for anxious people like me 😉

 For 2 persons

2 or 3 chicken breast (without skin)

2 lemons

1 plain (unflavoured) yogurt (100 gr.)

1 garlic clove

fresh parsley, salt, black pepper

1 tablespoon of extra virgin olive oil

…….

Cut the chicken in dices or strips and put it in a bowl with chopped garlic, juice and zest of a lemon, finely cut parsley, salt and pepper.

Mix a bit, and add the yogurt and olive oil.

Mix well, cover it and let it rest for at least 15 min, or 1 hour, or 2… (the longer the better).

Wash the other lemon and cut it in big pieces.

Wet the sticks and insert the chicken in the skewers, with a piece of lemon at the end.

Grill for some minutes, turning them until they are golden.

Before serving, add some pepper and freshly cut parsley.

Ready to eat!

Serve them with salad, grilled veggies, baked potatoes, our watermelon sandwich , TZATZIKI    

… and enjoy!
