Good morning! Today we have blueberry muffins for breakfast.
We collected them yesterday during our forest walk, so they are really eco-friendly 🙂
These muffins don’t have any sugar or saturated fat, but they are still very spongy, tender and sweet. In the oven the blueberries will explode and it will be like jam. They are delicious.
For 6 muffins:
2 small ripe bananas
3 egg whites
½ cup oat flour
1 teaspoon of baking powder
some drops of vanilla extract
sweetener to taste (optional)
2 handful of blueberries
Pre-heat the oven at 180 degrees.
Put all ingredients in a mixer (except the blueberries) and mix it well.
Pour the mix in muffin moulds (if they are not made of silicon, spread a bit of oil first).
Distribute some blueberries in each mould.
Bake at 180 degrees for ca. 40 min.
Let it cool for some minutes… or all night.
Ready to eat!
I prepare these muffins the night before, so in the morning I just have to cut fresh fruit, prepare a coffee and breakfast is ready.
When you try them, you won’t buy store-bought cakes again.
And as they are healthy and fit… we can eat 2 of them 😉
