In every “shabby chic” café, you know, the ones with vintage tables and mixed chairs, displayed under glass cloches are carrot cakes, brownies, muffins, cupcakes and banana bread.
You know what I mean, don’t you?
Those cakes look really nice and very enticing… but the sad truth is that they contain bombs of sugar and butter -or even worse kind of fat 🙁
But don`t fear, I’m here, to find healthy alternatives… and this banana bread is “the success of the month” at our home. My son devours it. More so, when I not only put nuts in, but also dark chocolate chips 😉
For its energetic ingredients (banana, oats, egg) and its healthy fat (nuts), it is the perfect breakfast.
You can bake this cake on Sunday, for example, and you will have a delicious breakfast on Monday and even on Tuesday… as it keeps fresh and moist for 3-4 days.
For a 25 cm loaf tin or mould you will need:
150 gr. oat flour
50 gr. ground almonds
2 ripe bananas
25 gr. nuts
90 ml. skimmed milk
½ tablespoon baking powder
1 teaspoon cinnamon
1 egg white
Blend the bananas with milk, water, eggs and egg white.
In another bowl, mix the dry ingredients: oats, almond, baking powder and cinnamon.
Put the dry ingredients into the liquid ingredients. Add the chopped nuts and mix it carefully.
Pour the mix into the mould and bake at 200 degrees for about 25 minutes. – You can prick it with a toothpick and if it comes out nearly clean, it’s done. It’s important not to cook it too much!
Leave it to cool and take it out of the tin.
And it’s ready to eat!
