Autumn salad

Now, the autumn and cooler days have arrived to stay.

So I like to prepare warm salads, with “comfort food” ingredients, such as roasted mushrooms, goat cheese, nuts, slices of pear…

On another hand, the season of kale has started. Kale is a bomb of nutrients with nearly no calories.

So, let’s prepare a super-vitamin salad.

For 1 person:

2 or 3 leaves of kale

½ big pear (or 1 small pear)

a handful of roasted hazelnuts (chopped)

8 – 10 mushrooms

a piece of goat cheese

For the dressing:

½ teaspoon of Dijon mustard

1 tablespoon of extra virgin olive oil

1 teaspoon of nut oil

½ tablespoon of apple vinegar

juice of ½ lime

black pepper

……….

Wash the kale leaves and cut them with your hands in pieces of 5 cm. (without the stem which is too hard to eat raw).

Put the kale pieces in a big salad bowl.

To prepare the vinaigrette: put in a bowl all the ingredients and mix well until it looks creamy.

Pour it over the kale and give it a “massage”, pressing with the hands. (It sounds silly, but the massage helps the leaves to become tender, they will soak up the dressing and it will be very tasty.)

Cut the goat cheese in dices.

Slice the pear and warm them in a pan, they will become caramelized.

Slice the mushrooms and sauté them for a couple of minutes.

Serve the kale on a plate, and distribute over them: the cheese, chopped hazelnuts, the pear and the mushrooms.

Ready to eat!

A very complete salad, as it gives us: vitamins, iron, calcium, protein, fibre, good fat… and it’s light but it reduces the appetite  🙂
